50 Pounds. Terra Alba, is a dihydrate form of calcium sulfate used in food, beverage and pharmaceutical applications. Terra Alba consists of finely pulverized food-grade Gypsum. It is the traditional coagulant for Chinese tofu. Made of naturally occurring calcium sulfate, it is preferred by many to coagulate soy milk to make tofu as it is a delicious source of dietary calcium. Terra Alba tends to make a softer smoother tofu than Nigari. It can also be used for brewing and other fermentation processes.
